Instructions
Step 1
Heat the oil and ginger: Heat your pot and add 2–3 tbsp of sesame oil. Let it heat up in the pot for a couple of minutes, then add the 10 ginger slices.
Step 2
Fry the ginger and chicken: Stir fry on low-medium heat until the edges of the ginger slices are lightly golden brown. Then, add the 350g of cubed chicken thighs or breast.
Step 3
Deglaze with wine: Stir fry well, then add 1 tbsp of hua tiao wine. Let the wine cook off for a few minutes while sauteing.
Step 4
Add seasonings and liquid: Add 1/2 cup of water, 2 tbsp of light soy sauce, a dash of white pepper, and fresh chilli (if using).
Step 5
Simmer: Let it cook for another 10–15 minutes on medium heat.
Step 6
Adjust taste: Add more water, salt, and sugar to taste if needed before serving.
