Instructions

Step 1
1. Prepare the aromatics: Roast the garlic and jalapeños until softened and lightly charred. Caramelize the onions over medium-low heat until deeply golden and sweet. Allow everything to cool slightly.

2. Whip the cottage cheese: Add the cottage cheese to a food processor and blend until completely smooth and creamy.

3. Combine: Add the roasted garlic, caramelized onions, roasted jalapeños, diced green chilies, and shredded cheddar cheese to the whipped cottage cheese. Pulse a few times until evenly combined, leaving small bits of vegetables for texture if desired.

4. Taste and adjust: Add additional roasted garlic, jalapeños, or cheddar to suit your preference. (The flavors become more pronounced after chilling.)

5. Chill: Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
