Instructions
Step 1
Heat oil in pan and cook garlic and onions for 2 minutes
Step 2
Add celery and carrot, cook for 10 minutes.
Step 3
Add the rest of the ingredients except the salt
Step 4
While cooking, scoop scum off surface and discard periodically. Bring to simmer and then place lid on and set heat to medium-low for 40 minutes until lentils are soft.
Step 5
Use a blender 2-3 quick whizzes to thicken
Step 6
Season with salt and pepper at end until just right
