Step 1
Heat the olive oil or butter in a saucepan over medium heat. Drop in the whole cumin seeds and let them sizzle for 30 seconds until fragrant.
Step 2
Add the dry couscous to the pan. Stir constantly for 2 minutes until the grains absorb the infused oil and turn a light golden, nutty color.
Step 3
Pour in the boiling stock mixed with the minced garlic.
Step 4
Stir once, cover immediately with a tight lid, and remove the pan from the heat. Let it steam undisturbed for 5 minutes.
Step 5
Remove the lid and fluff the couscous thoroughly with a fork.
Step 6
Stir in the fresh coriander, lemon juice, lemon zest, salt, and pepper. Taste and add an extra pinch of salt if needed.
