Instructions

Beef and Beans

Step 1
Cook ground beef then remove excess fat. Add refried beans stir to combine. Cover and set aside.

Enchilada Sauce

Step 2
Combine all remaining ingredients except tortillas and cheese in a 2 quart microwave oven safe glass bowl.
Step 3
Microwave on high for 6 minutes, stirring after 3 minutes.
Step 4
Stir 1/2 cup of sauce into hamburger/bean mixture.
Step 5
Divide beef mixture in the 8 flour tortillas (about 1/4 cup each) and divide 1 cup of cheddar cheese (about 2 T each) over the beef mixture. Roll up each tortilla and place in a 12 x 8 x 2 inch microwave safe baking dish. Pour remaining enchilada sauce over the tortillas making sure tortillas are covered and ends are not sticking up as they will dry out and get hard.
Step 6
Optional: Slice black olives and sprinkle on top of sauce.
Step 7
Cover enchilada baking dish with plastic cling wrap turning back one corner to allow venting.
Step 8
Microwave on high for 6 minutes or until heated through. Carefully (hot steam) pull back plastic wrap leaving it attached to one end then sprinkle remaining cheese on top of enchiladas then lay plastic wrap back over the cheese and let stand for 2 minutes.
Step 9
Toppings: sliced green onion, chopped tomatoes, avocados, shredded lettuce and sour cream.
