Ingredients

1 Tbspolive oil

1clove garlic

1yellow onion
small, 1/2 large

1bell pepper
large, optional two small bell peppers of different colors for a prettier presentation

1portobello mushroom cap

1jalapeno

½ cupsfrozen corn

1 tspground coriander

½ tspchili powder

cayenne

¼ tsppepper

½ Tbspsoy sauce

2whole grain flour tortillas
large or 4 small taco size

1 cuplettuce
shredded

½ cuptomatos
diced, you can substitute prepared salsa

2 Tbsplow fat greek yogurt
Instructions
Step 1
1. Slice the bell pepper and mushrooms into ¼ inch thick slices. Thinly slice the onion into half moons, mince the garlic and about 1 tsp jalapeno or to taste (be sure to remove seeds to reduce heat)

2. Heat the oil in a pan over medium high heat. When the oil begins to shimmer, toss in the mushroom, bell pepper, garlic, jalapeno, and onion, and sauté, stirring and tossing frequently.

3. When the veggies start to soften and small awesome, add in all the spices, soy sauce, and corn. Toss to coat everything evenly with the spices and soy sauce. Cook for about 5 minutes or until the veggies reach your preferred tenderness.

4. Wrap the tortillas in a slightly damp towel or paper towel. Microwave about 30 seconds or until warmed through. (You can use an oven at 200 if you prefer, just begin preheat while you’re cooking veggies)

5. Assemble your fajitas. Top each tortilla with fajita veggies, lettuce, tomatoes, and Greek yogurt
