Instructions

Step 1
Drizzle the olive oil into the base of a cold tagine and spread the chopped onions across the bottom.
Step 2
Layer the diced beef chuck directly over the onions.
Step 3
Add the sweet potato cubes, chopped dates, and drained chickpeas around the beef.
Step 4
Mix the ground ginger, turmeric, and salt into the beef stock, then pour it over the ingredients.
Step 5
Cover with the tagine lid, place it into a cold oven on the lowest rack, and set the temperature to 160°C.
Step 6
Bake slowly for 3 hours until the beef is meltingly tender and flakes with a fork.
