Instructions

Step 1
Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
Step 2
Prepare the dressing: In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and pepper until smooth and well combined.
Step 3
Combine the ingredients: Add the cooled macaroni, shredded coleslaw mix, red onion, green bell pepper, red bell pepper, and celery to the bowl with the dressing. Gently toss until all the ingredients are evenly coated with the dressing.
Step 4
Chill the coleslaw: Cover the bowl with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.
Step 5
Serve: Give the coleslaw a quick stir before serving. Adjust seasoning with additional salt and pepper if needed. Serve cold and enjoy!
