Ingredients

2 x 15 ozCannellini beans
cans, or Great Northern, drained
½ cupdry red lentils
rinsed
1 jarmarinara sauce
1 cupsvegetable broth
or water
1 Tbspolive oil
1yellow onion
diced
2garlic cloves
1 tspItalian seasoning
salt
red pepper flakes
1 cupbaby spinach
1 cupsshredded mozzarella cheese
grated Parmesan
fresh basil

Instructions
Step 1
Sauté the Base: Heat the olive oil in a large, oven-safe skillet over medium heat. Add the diced onion and cook for 5 minutes until soft. Stir in the minced garlic, Italian seasoning, and red pepper flakes until fragrant. [1]
Step 2
Simmer the Lentils: Add the rinsed red lentils, marinara sauce, and vegetable broth (or water) to the skillet. Bring to a gentle simmer, then reduce the heat, cover, and let it cook for 15–20 minutes until the lentils are tender. [1, 2, 3, 4, 5]
Step 3
Add the Beans: Stir in the drained beans and baby spinach. Cook uncovered for another 5 minutes until the beans are warmed through and the spinach has wilted. [1, 2, 3, 4]
Step 4
Melt the Cheese: Turn on your oven's broiler. Sprinkle the mozzarella and Parmesan cheeses evenly over the bean mixture. Broil for 3-5 minutes until the cheese is bubbling and slightly browned. [1, 2, 3, 4]
