Ingredients

2 x 12 ouncebroccoli and cauliflower florets
bags
12 ouncesbaby carrots
halve lengthwise if they’re thick
1onion
large, sliced into half-moons
3 clovesgarlic
minced
3 tablespoonsolive oil
3 tablespoonslow-sodium soy sauce
1 tablespoonhoney
2 teaspoonsfresh lemon juice
½ teaspoongarlic powder
½ teaspoonblack pepper
1 tablespoonbutter
melted, optional, added after roasting
Instructions
Step 1
Preheat the oven to 425°F.
Step 2
Line a large baking sheet (or two if needed) with parchment paper.
Step 3
Toss all the vegetables with the olive oil, soy sauce, honey, lemon juice, garlic, garlic powder, and black pepper until evenly coated.
Step 4
Spread the vegetables into a single layer. Don’t overcrowd the pan, or they’ll steam instead of roast.
Step 5
Roast for 25–30 minutes, stirring everything halfway through (around 12–15 minutes).
Step 6
If you’d like a little extra browning, switch to broil for the last 2–3 minutes, watching closely.
Step 7
If using butter, drizzle the melted butter over the vegetables right after they come out of the oven and toss.
