Lemon Ricotta Filling
Instructions
Step 1
Make the Batter: Add the milk, eggs, canola oil, flour, sugar, and salt to a blender in the order listed. Blend until completely smooth, scraping down the sides of the jar if needed. Optional: Cover and refrigerate the batter for 1 to 2 hours for a smoother texture.

2. Cook the Crêpes: Heat a non-stick skillet over medium-high heat and lightly coat it with oil. Lift the pan off the heat and pour in a small amount of batter, quickly swirling it to coat the bottom evenly. Return to the heat and cook until lightly golden underneath, about 20 seconds. Flip and cook for another 15 seconds. Transfer to a plate and repeat with the remaining batter, adding more oil to the pan as needed.
Step 3
3. Whip the Filling: Combine the ricotta cheese, sugar, vanilla, milk, and lemon zest in a food processor. Blend until the mixture is smooth and creamy.
Step 4
4. Assemble and Serve: Spoon the lemon ricotta filling onto the warm crêpes, then roll or fold them as desired.
