Bún Chả Hanoi is a classic Northern Vietnamese dish featuring smoky grilled pork patties and caramelized pork belly served with rice vermicelli, fresh herbs, crunchy pickled vegetables, and a warm sweet-and-sour fish sauce.
The pork marinates for at least 2–3 hours before grilling, allowing the fish sauce, garlic, shallot, oyster sauce, and caramel sauce to season the meat thoroughly. Each component is served separately so diners can combine the noodles, herbs, pork, pickles, and dipping sauce one bite at a time.

Instructions
Step 1

Make The Caramel Sauce
Add 3 tablespoons of sugar and a small splash of water to a saucepan over medium heat. Gently swirl the pan without stirring until the sugar melts and turns deep amber, about 3–4 minutes. Carefully add 2 tablespoons of water to stop the cooking process. Stir briefly, remove the pan from the heat, and set the caramel sauce aside.
Step 2

Marinate The Pork
Combine the ground pork shoulder with the seasoning powder, sugar, fish sauce, oyster sauce, 1 tablespoon of caramel sauce, minced shallot, and minced garlic. Add honey if desired. Place the sliced pork belly in a separate container and coat it with the same marinade. Cover both containers and refrigerate for at least 2–3 hours or overnight. Shape the marinated ground pork into small balls, then flatten them slightly to form patties.
Step 3

Prepare The Pickled Vegetables
Combine the sliced carrot and green papaya or kohlrabi with 1 tablespoon of salt. Let the vegetables sit for 10 minutes, then drain and squeeze out the excess liquid. Mix the vegetables with sugar, vinegar, and minced garlic to taste. Add seeded cucumber slices if desired. Let the pickles rest at room temperature for 1–2 hours.
Step 4

Make The Dipping Sauce
Combine water, sugar, minced garlic, vinegar, lime juice, and fish sauce in a saucepan. Use a starting ratio of 3 parts water to 1 part each fish sauce, sugar, and vinegar, then adjust the balance to taste. Bring the sauce briefly to a boil, then keep it warm until serving. Add sliced chili if desired.
Step 5

Grill The Pork
Grill the pork patties and pork belly slices separately over hot charcoal. Cook until both sides are golden brown, lightly charred, and fully cooked through. For an oven alternative, arrange the pork on a foil-lined rack and bake at 425°F (220°C) for approximately 10 minutes per batch using both upper and lower heat.
Step 6

Prepare The Rice Vermicelli
Separate fresh rice vermicelli strands and arrange them on a serving plate. When using dried rice vermicelli, bring a pot of water to a boil and cook the noodles according to the package instructions, usually for 3–5 minutes. Drain and rinse under cold running water, then set aside.
Step 7

Assemble And Serve
Divide the warm dipping sauce among individual serving bowls. Add several grilled pork patties, pork belly slices, and pickled vegetables to each bowl. Serve the rice vermicelli, remaining grilled pork, fresh herbs, bean sprouts, lime wedges, and extra chili separately. To eat, place a small portion of noodles and herbs into the warm dipping sauce, then enjoy them with the grilled pork and pickled vegetables.
