3 lbpork belly
cubed
2 dozenquail eggs
hard boiled
½ cfish sauce
½ csoy sauce
2shallots
minced
10garlic cloves
minced
pepper
to taste
4 Tbspwhite sugar
2 canscoconut soda
neutral oil

Instructions
Method
Step 1
In deep pot, add pork belly and cold water till submerged. Bring water to a boil and skim off foam of impurities from top of water until clean. Strain pork belly from liquid and wash in water.
Step 2
In separate bowl combine washed pork belly, fish sauce, soy sauce, and black pepper. Let marinate for 30 minutes
Step 3
In large pan, add tablespoon of oil on medium heat. Add sugar and let sugar brown until it is caramel in color
Step 4
Add pork to the caramel, along with shallots and garlic. Sauté for 10-15 minutes.
Step 5
Add remaining fish sauce/soy sauce liquid from marinade and cans of coconut soda. Bring mixture to a boil.
Step 6
Add hard boiled quail eggs and braise for 45 minutes and/or till pork belly is tender
Step 7
Serve with white rice and garnish with green onions
