3 TbspAvocado Oil
1red onion

Instructions
Step 1
Cut the pork tenderloin into large 3-inch chunks. Season all sides lightly with salt.
Step 2
Press Sauté (High) on your Instant Pot and add 3 tbsp of avocado oil. Add the finely diced onion and smashed garlic, stirring for 2-3 minutes until soft and translucent.
Step 3
Pour in 4 tbsp of apple cider vinegar and 1/2 cup of chicken broth. Use a wooden spoon to scrape all browned bits off the bottom of the liner. Turn off Sauté mode.
Step 4
Add the remaining 2.5 cups of broth, ground cumin, smoked paprika, dried oregano, garlic powder, onion powder, and ground coriander to the pot, stirring to combine spices into the liquid.
Step 5
Nestle the pork tenderloin chunks directly into the spiced liquid in the pot.
Step 6
Secure the Instant Pot lid and ensure the valve is set to Seal. Select Pressure Cook (High) and set the timer for 15 minutes.
Step 7
When the cook cycle finishes, allow the unit to naturally pressure release (NPR) for 10 minutes, then vent any remaining steam.
Step 8
Open the lid, transfer the pork to a large bowl, and use two forks to shred the meat into soft, fine threads. Toss the shredded pork back into the warm pot juices so it absorbs the flavor before serving over warm white rice with your choice of soft toppings.
