Instructions
Step 1
Prepare the Lasagna Noodles: Cook lasagna noodles according to package instructions until al dente. Drain and lay them flat on a parchment-lined baking sheet to prevent sticking.
Step 2
Cook Ground Turkey : In a large skillet, heat olive oil over medium heat. Add ground turkey and cajun seasoning, and cook for 3-4 minutes, or until the ground turkey is no longer pink. Remove from the skillet and set aside.
Step 3
Sauté Vegetables: In the same skillet, add diced onion, garlic, and red bell pepper. Sauté for 4-5 minutes, or until the vegetables are softened.

Make the Filling: In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, and egg. Add the sautéed vegetables and cooked ground turkey to the mixture. Stir until well combined. Season with salt and pepper to taste.

Assemble the Roll-Ups: Spread a thin layer of the filling onto each lasagna noodle. Roll up each noodle carefully and place seam-side down in a greased 9×13-inch baking dish.

Prepare the Sauce: In a small saucepan, melt butter over medium heat. Add marinara sauce and heavy cream, stirring until well combined. Bring to a simmer and cook for 5 minutes until the sauce thickens slightly.

Bake: Pour the sauce evenly over the lasagna roll-ups in the baking dish. Sprinkle the remaining mozzarella cheese on top. Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
