Chickpea and Coconut Bites

Instructions

Step 1
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2
Place the chickpeas, oats, eggs, coconut, maple syrup, vanilla, and baking powder into a food processor or high-speed blender and pulse until no whole chickpeas remain.
Step 3
Using a tablespoon, place spoonfuls of the blended mixture onto the prepared baking sheet and use the tablespoon to smooth into circular (cookie) shapes.
Step 4
Transfer the bites to the oven and bake for 15 to 20 minutes or until golden brown at the edges and bottom. Let cool before serving. Freeze for up to 3 months.
