Paprika Pork

Instructions

Step 1
1. Roast the peppers: Turn on the broiler. Slice all the bell peppers into thick strips and arrange them in a single layer on a foil-lined broiler sheet. Broil for 20–25 minutes until the edges are lightly charred.

2. Sear the pork: Cut the pork tenderloin into bite-sized chunks. Season with salt and pepper, then cook in a nonstick skillet for about 5 minutes until lightly browned.

3. Simmer the base: Move the browned pork to a heavy pot. Stir in the paprika, tomato sauce, water, and a pinch of salt and pepper. Bring the liquid to a boil, lower the heat, cover with a lid, and let it simmer gently for 30 minutes.
Step 4
4. Combine and serve: Add the charred pepper strips to the pot and continue cooking for another 10–15 minutes until the meat is fully tender. Adjust seasoning with salt and pepper to taste, then serve right away.
