Instructions

Step 1
Prep the duck: Pat duck breasts dry. Score the skin in a crosshatch pattern without cutting the meat. Season both sides with salt.
Step 2
Start cold: Place breasts skin-side down in a cold skillet. Turn heat to medium-low. Cook 12 to 15 minutes to render fat and crisp skin.
Step 3
Finish cooking: Flip the breasts and cook for 2 to 4 minutes on the other side until medium-rare (135°F internal) or preferred doneness. Rest on a board for 5 minutes.
Step 4
Make the cherry sauce: Pour out most duck fat, leaving about 1 teaspoon in the pan. Sauté the shallot for 1 minute. Add the fresh cherries, safe stock, and maple syrup. Simmer for 5 to 7 minutes until cherries soften and sauce lightly thickens.
Step 5
Serve: Slice the duck breast and spoon the fresh cherry sauce over the top.
