Cut into neat triangles and served alongside golden, crispy fries, this recipe makes four sandwiches per person, making it perfect for a filling lunch or a casual dinner for two.

Instructions

Step 1
1. Bake the fries - Preheat the oven to 220°C (200°C fan). Spread the fries on a baking tray in a single layer, season with salt and pepper, and bake for 18–20 minutes until golden and crisp, flipping halfway through

2. Cook the veggie bacon - Pan-fry the vegetarian bacon strips over medium heat for 2–3 minutes per side until browned and slightly crisp. Set aside on a plate.

3. Toast the bread — Toast all 24 bread slices until golden and firm enough to hold the fillings without going soggy.

4. Spread mayo on every inside surface — Lay out 3 slices of toast per sandwich (8 sandwiches total). Spread mayonnaise on the inside face of the bottom slice, on BOTH faces of the middle slice, and on the inside face of the top slice.

5. Build the first layer - On the bottom slice (mayo side up), layer 2 lettuce leaves, a few tomato slices, and 2 slices of Edam cheese.

6. Add the middle layer - Place the middle slice on top (mayo on both sides). Layer on 2 slices of vegetarian ham and 2 strips of the cooked veggie bacon.

7. Close each sandwich - Close with the top slice, mayo side down. Repeat for all 8 sandwiches (4 per person).

8. Skewer and cut - Secure each sandwich with skewers, then cut diagonally into quarters or halves
