1. Rinse the rice

Place the rice in a bowl and rinse it with warm water, gently stirring it with clean hands. Let it sit until the water cools.

Then rinse it several times under cold water until the water runs clear. Drain very well and let the rice dry completely.

2. Make the tomato sauce

Chop the tomatoes and ¼ onion.

Add them to a blender along with the garlic clove. Blend until completely smooth. Set aside.

3. Toast the rice

Heat a little vegetable oil in a pot over high heat.

Once the oil is hot, add the well-drained rice. Fry, stirring frequently, until the rice becomes lightly golden and makes a slightly crackling sound when stirred.

4. Add the onion, garlic, and tomato

Add a little finely chopped onion and garlic, if desired.

Stir well, then add the blended tomato mixture.

Reduce the heat and continue cooking for a few minutes, allowing the tomato mixture to fry together with the rice.

5. Heat the broth

Meanwhile, heat the 2 cups of chicken broth in a separate pot.

Once hot, season with salt and/or chicken bouillon powder to taste.

6. Add the broth and vegetables

Pour the hot chicken broth over the rice.

7. Cook the rice

Bring the rice to a boil.

Once it begins boiling, cover the pot and reduce the heat to very low.

After 15 minutes, gently fluff the rice with a fork or spoon, making sure the tomato and vegetables are evenly distributed.

Cover again and cook for 2 more minutes over low heat.

Turn off the heat and keep the pot covered.

Let the rice rest for 20–30 minutes. This allows it to finish cooking and absorb any remaining moisture.
