Mexican Grilled Chicken with Creamy Street Corn Salad & Coriander Lime Rice

Ingredients

1300gboneless chicken thighs
raw, fat trimmed
2 ½ tspsalt
4 tsppaprika
2 ½ tspcumin
4 tspgarlic powder
3 tsponion powder
4 tsporegano
1 ½ tspchilli powder
30golive oil
600gcanned sweet corn
drained
200gred onion
chopped
2 tspgarlic powder
2 tsppaprika
150gred bell pepper
chopped
80gjalapeño
chopped
300glow fat yogurt
100glight mayo
70glow fat feta cheese
2 Tbspfresh coriander
finely chopped
2 tspTajín seasoning
250gbasmati rice
uncooked
coriander
finely chopped
lime juice

Instructions
Step 1
Trim excess fat from boneless chicken thighs. Add to bowl with Mexican seasoning, lime juice and olive oil. Mix well to marinate.
Step 2
Add washed uncooked rice to a pot of water, bring to a boil then simmer on low heat until fully cooked. Once cooked, let it cool, add chopped coriander with lime juice and pinch of salt. Mix well then set aside.
Step 3
Get a large lined sheet pan, spread marinated chicken evenly then oven bake for 23 mins at 200°C/390°F and broil for 5–6 mins until golden brown, charred and juicy.
Step 4
Remove chicken from pan, add sweet corn, red onion, garlic powder and paprika. Mix in all the chicken juices then flatten evenly. Oven roast for 15 mins until crispy.
Step 5
Add roasted corn to a large mixing bowl with all listed ingredients then mix well until creamy.
Step 6
Chop the chicken into cubes, serve with cilantro lime rice and street corn salad.
