Instructions
Step 1
1. Preheat the oven to 350F (175C). Grease four 8-oz ramekins or oven-safe bowls.

2. In a blender, blend the cottage cheese, eggs, oat flour, maple syrup, cinnamon, and nutmeg until smooth.

3. Stir in the grated carrots and most of the walnuts by hand.

4. Divide among the ramekins and top with the remaining walnuts.

5. Bake 25-30 minutes, until set in the center and golden.
Step 6
6. Cool a few minutes before serving.
Step 7
Tips: Grate the carrots finely so they soften in the bake. Blend the cottage cheese fully smooth. Great with a dollop of Greek yogurt "frosting." Fridge up to 4 days.
