Instructions

Step 1
Heat 1 tablespoon of oil in a large, heavy-bottomed Dutch oven over medium-high heat. Add the sliced sausage and sear until browned on both sides (4–5 minutes). Remove with a slotted spoon and set aside. Add the chicken thigh pieces, season lightly with salt, and sear until browned on all sides (5–6 minutes). Remove and set aside with the sausage.
Step 2
Reduce heat to medium. Add the remaining oil and the flour to the pot. Whisk continuously for 15 to 20 minutes. The roux will transition from pale yellow to peanut butter, and finally to a medium peanut-shell brown. Watch closely toward the end so it does not burn.
Step 3
Immediately add the diced onion, green bell pepper, and celery to the roux. Stir well; the moisture from the vegetables will stop the roux from darkening further. Cook for 5 minutes until soft. Stir in the garlic and green curry paste, stirring continuously for 1 to 2 minutes until fragrant and well incorporated.
Step 4
Slowly pour in the chicken stock while whisking constantly to prevent lumps. Add the stewed tomatoes (with juices), fish sauce, and sugar. Return the browned sausage and chicken thighs (along with any accumulated juices) to the pot. Bring to a gentle boil, then turn the heat to low, cover partially, and simmer for 25 minutes.
Step 5
In a separate small skillet over medium-high heat, melt 1 tablespoon of butter and sauté the sliced okra for 5 to 7 minutes until lightly browned and the viscosity ("slime") reduces. Stir the sautéed okra and chopped mustard greens into the gumbo. Simmer uncovered for 10 to 12 minutes until the greens are tender.
Step 6
Nestle the scrubbed clams and raw shrimp into the simmering liquid. Cover the pot with a lid and cook for 5 to 7 minutes, until the clams open wide and the shrimp turn pink and opaque. Discard any clams that do not open.
Step 7
Remove from heat. Taste the broth and add another tablespoon of fish sauce or a squeeze of fresh lime juice if you want more depth or acidity. Serve hot in deep bowls over scoops of cooked jasmine rice, garnished with fresh Thai basil and cilantro.
