Japanese Milk Bread in Bread Machine

I did about 100 g hard red wheat, I alternated flours as I loaded bread machine. This turned it so light & fluffy! I just barely melted the butter. I didn’t have milk powder but would like to use next time. I made it plain but there’s options for mix-ins.

Instructions

Step 1
All of the cooled tangzhong 1/2 cup (113ml) cold whole milk 1 large egg (room temperature) 3 tbsp unsalted butter (softened or melted) 1/4 cup (50g) granulated sugar 1 tsp salt 2 1/2 cups (300g) bread flour (Do not use all-purpose) 1 tbsp dry milk powder (optional, for extra dairy richness) 1 1/2 tsp instant dry yeast
Step 2
Cook and Cool the Tangzhong Whisk the 2 tbsp flour and 6 tbsp milk together in a small saucepan until completely smooth. Cook over low heat, stirring constantly. It will quickly thicken into a smooth, pudding-like paste (about 2 minutes). Scrape the paste into a small bowl and let it cool completely to room temperature. Tip: Warm tangzhong will kill the yeast

Load the Bread Machine. Wet ing first

Step 3
Pour the cold milk, egg, and butter into the bread pan. Add the cooled tangzhong paste. Pour the bread flour and optional milk powder on top, ensuring the flour completely covers and seals the liquid beneath it. Add the sugar and salt to opposite corners of the pan. Use your finger to make a small, shallow well in the center of the flour. Pour the yeast into the well, ensuring it stays dry and does not touch any liquid or salt
Step 4
Lock the pan into your West Bend machine. Select the Sweet setting (usually option #4 or #5 on West Bend menus). If your machine doesn't have a Sweet cycle, choose Basic/White. Set the loaf size to 1.0 LB (or the lowest setting your machine allows). Set the crust color to Light. Because milk bread has a high sugar content, it browns very quickly; the light setting prevents a burnt crust. Press Start
Step 5
When the machine beeps at the end of the bake cycle, immediately turn the machine off and unplug it. Using oven mitts, remove the hot bread pan. Shake the loaf out onto a wire cooling rack.Let it cool for at least 45 minutes before cutting. Slicing a hot milk bread loaf traps steam inside and turns the texture gummy

Lightly toss wet or sticky items in 1 teaspoon of bread flour before adding them.Drop and Close: Open the lid, dump the mix-ins directly onto the moving dough, and close the lid immediately. Do not stop or pause the machine.

Because Japanese milk bread is naturally sweet, rich, and pillowy, it pairs exceptionally well with mix-ins that complement its dessert-like quality. Sweet Options Raisins or Dried Cranberries: Soaked in warm water for 5 minutes, then patted completely dry with a paper towel. Pairs beautifully with a dash of cinnamon added to the dry flour. Chocolate Chips: Use mini chocolate chips or chopped dark chocolate chunks. Keep them cold in the fridge until the moment you add them so they do not melt into the dough during the warm knead. Cinnamon Sugar Swirl: (Requires a quick pause) If you want a visual swirl instead of chunks, wait until the final knead ends. Pull the dough out quickly, roll it flat, sprinkle cinnamon sugar, roll it into a log, remove the paddle, and place the log back in the pan to rise and bake. Savory & Umami Options Cheese and Scallions: 1/2 cup of finely cubed sharp cheddar cheese and 2 tablespoons of finely chopped, dried green onions. Toasted Black Sesame Seeds: 2 to 3 tablespoons of toasted black sesame seeds add a traditional Japanese nutty flavor and beautiful visual speckles. Crispy Bacon or Pancetta: 1/2 cup of cooked, thoroughly drained, and cooled bacon bits.
