Important make-ahead tip Don’t add baking powder, kala namak, turmeric, vanilla, cinnamon, or maple syrup to the make-ahead base. Add those when you’re preparing the individual food.

Instructions

Step 1
. Add the oats and oat milk to a blender.
Step 2
2. Blend for 30–45 seconds, until the oats are completely broken down and the mixture looks smooth.

3. Add the cornstarch, nutritional yeast, lecithin (if using), and salt.
Step 4
4. Blend for another 10–15 seconds, just until everything is thoroughly combined.
Step 5
5. For an especially smooth egg-like consistency, pour the mixture through a fine-mesh strainer into a bowl or measuring cup. This step is optional.
Step 6
6. Pour the mixture into a clean, airtight container or jar.
Step 7
7. Cover and refrigerate immediately.
Step 8
8. When you’re ready to use it, shake the container very well or whisk the mixture, because it will naturally thicken and separate slightly while refrigerated.
Step 9
9. If it’s too thick to pour, whisk in 1–2 tablespoons of oat milk until you reach the consistency you need.
