Minced Meat and Rice One-Skillet Recipe
A hearty one-skillet meal of browned minced meat, vegetables, and rice simmered in broth with tomato paste and spices, then finished with peas and corn for an easy dinner.

Ingredients
4 servings
500gminced meat
ground beef, pork, or a mix
1 cuplong-grain white rice
uncooked, rinsed
1yellow onion
small, diced
1red bell pepper
diced
1 cupfrozen peas and corn mix
2garlic cloves
minced
2 cupsbeef broth
or vegetable
2 Tbsptomato paste
1 tspsweet paprika
½ tspdried oregano
salt
to taste
black pepper
to taste
1 Tbspolive oil
Instructions
Step 1
Brown the meat: Heat the olive oil in a large skillet or deep pan over medium-high heat. Add the minced meat, breaking it up with a spoon, and cook until browned (about 5–7 minutes).
Step 2
Sauté vegetables: Add the onion, bell pepper, and garlic to the pan. Cook for 3–4 minutes until the vegetables begin to soften.
Step 3
Toast the rice & spices: Stir in the tomato paste, sweet paprika, oregano, salt, and pepper. Add the rinsed rice and stir continuously for 1 minute to coat the grains in the pan juices.
Step 4
Simmer: Pour in the broth and bring the mixture to a rapid boil. Scrape up any browned bits from the bottom of the skillet.
Step 5
Cook covered: Turn the heat down to low, cover the pan with a tight-fitting lid, and simmer undisturbed for 15 minutes (or until the rice is tender and has absorbed the liquid).
Step 6
Add frozen veggies & fluff: Remove the lid, stir in the frozen peas and corn, cover again, and let sit off the heat for 5 minutes so the heat steams the veggies. Fluff with a fork and serve hot.
