Stuffed Acorn Squash
Roasted acorn squash halves stuffed with sautéed maple-spice sausage, onion, and apples, mixed with sage, panko, and Parmesan, then baked until hot and topped with cheese.

Instructions
Step 1
Preheat oven to 400°F.
Step 2
Cut off ends and halve squash.
Step 3
Spoon out seeds.
Step 4
Brush with olive oil; season with salt and pepper.
Step 5
Bake 40 minutes.
Step 6
Sauté sausage in pieces.
Step 7
Sauté onions (2–3 minutes).
Step 8
Sauté apple with onions (2 minutes).
Step 9
Add sage and panko.
Step 10
Add 3/4 cup Parmesan.
Step 11
Stuff squash and bake 15–20 minutes.
Step 12
Top with cheese.
