Baked Cheeseburger Tortilla Roll-Ups (with Sauce)

Burrito-size tortillas spread with a seasoned ground beef and mozzarella mixture, rolled and baked until crisp, then topped with more cheese and served with a quick ketchup-mayo dip.

Instructions
Step 1
Preheat oven to 420°F. Spray or brush a 7 x 11 baking dish with olive oil.
Step 2
In a large bowl, mix together the ground beef, onion, pepper, parsley, 1 cup shredded mozzarella, salt, garlic powder, onion powder, and paprika.
Step 3
Evenly divide the meat mixture amongst the tortillas. Thinly spread it out with your fingers to reach the edge of each tortilla as best as you can.
Step 4
Roll tortillas tightly, then cut into 2 1/2-inch-long rolls.
Step 5
Place the rolls onto the baking dish, meat-cut side up. Lightly brush with olive oil and bake for 25–30 minutes.
Step 6
Top with remaining mozzarella cheese and return to the oven until melted. Optionally broil at the end for 2–3 minutes, watching closely.
Step 7
Sauce: Mix ketchup, mayo, garlic powder, and salt to taste.
