FOR THE PORK RIBS
1rack pork ribs
cooking oil
1 tspsalt
1 tspblack pepper
1 ½ tspsmoked paprika
1 tspgarlic powder
1 tsponion powder
1 tspCajun seasoning
½ tspAromat
½ tspItalian seasoning
2 Tbspwater
FOR THE STICKY GLAZE
5 TbspBBQ sauce
2 Tbsphoney
1 Tbspbrown sugar
1 TbspWorcestershire sauce
1 Tbspsoy sauce
1 tspGarlic paste
½ tspsmoked paprika
Chilli flakes
or hot sauce, optional
FOR THE CAJUN FRIES
2sweet potatoes

1 tspCajun seasoning
½ tspsmoked paprika
½ tspgarlic powder
½ tsponion powder

FOR THE BUTTERY CORN
Instructions
PREPARE THE RIBS
Step 1
Preheat the oven to 160°C fan / 180°C conventional.
Step 2

Remove the thin membrane from the back of the ribs if it is still attached, then pat the ribs dry with kitchen paper.
Step 3

Drizzle with the oil and season all over with the salt, black pepper, smoked paprika, garlic powder, onion powder, Cajun seasoning, Aromat and Italian seasoning.
Step 4

Massage everything thoroughly into the meat.
SLOW COOK THE RIBS
Step 5
Place the ribs meat-side up onto a large sheet of foil. Add 2–3 tablespoons of water around the ribs to help create steam.
Step 6

Wrap the ribs tightly in the foil, making sure there are no large gaps for the steam to escape. Place onto a baking tray and cook for 2–2½ hours, or until the meat is beautifully tender.
MAKE THE GLAZE
Step 7

While the ribs cook, combine the BBQ sauce, honey, brown sugar, Worcestershire sauce, soy sauce, garlic paste and smoked paprika. Add chilli flakes or hot sauce if you want an extra kick.
Step 8

Mix until smooth and set aside.
PREPARE FRIES
Step 9

Peel the sweet potatoes if preferred, then cut into evenly sized fries.
Step 10

Add them to a bowl and sprinkle over the cornflour. Toss until lightly coated.
Step 11

Add the oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt and black pepper.
Step 12

Toss again until every fry is evenly seasoned.
CHECK RIBS
Step 13
Once the ribs have finished slow cooking, remove them from the oven and leave them wrapped while you increase the oven temperature to 200°C fan.
GLAZE THE RIBS
Step 14

Carefully unwrap the ribs and discard any excess cooking liquid. Brush a generous layer of the sticky honey BBQ glaze all over the ribs. Place them back into the oven uncovered for 10–15 minutes, adding another layer of glaze halfway through.
CARAMELISE
Step 15

For that proper sticky finish, place the ribs under a hot grill for 2–4 minutes until the glaze is bubbling and caramelised around the edges. Keep a close eye on them as the honey and sugar can burn quickly. Brush over one final light layer of glaze once they come out for an extra glossy finish.

COOK THE CORN

While everything finishes cooking, boil the corn in a saucepan of water for 6–8 minutes until tender. Mix the softened butter with the garlic paste, smoked paprika, Aromat, black pepper and parsley. Drain the corn and brush generously with the seasoned garlic butter.
SERVE
Step 18

Allow the ribs to rest for around 5 minutes before slicing between the bones. Serve the sticky honey BBQ ribs alongside the Cajun sweet potato fries and buttery garlic corn. Spoon or brush any remaining glaze over the ribs and finish the corn with an extra little knob of seasoned butter.
