Easy Oven Beef Roast with Sweet Potatoes, Carrots & Green Beans

Ingredients
4 servings
2.5 lbbeef chuck roast
2sweet potatoes
medium, peeled and cut into large chunks
2 cupsgreen beans
trimmed
2carrots
medium, peeled and cut into chunks
1 cupbeef bone broth
low-FODMAP, no onion or garlic
1 Tbspgarlic-infused extra-virgin olive oil
1 tspturmeric
1 tspdried rosemary
1 tspdried thyme
½ tspblack pepper
½ tspsalt

Instructions
Step 1
1. Preheat oven to 325°F.
Step 2
2. Pat the roast dry. Rub it with the garlic-infused olive oil, turmeric, rosemary, thyme, black pepper, and salt.
Step 3
3. Place the roast in a Dutch oven or covered roasting pan. Pour the bone broth around the roast.
Step 4
4. Cover tightly and roast for 2 hours.
Step 5
5. Add the sweet potatoes and carrots around the beef. Cover and continue cooking for another 30–45 minutes.
Step 6
6. Add the green beans during the last 20–25 minutes.
Step 7
7. The roast is ready when it is very tender and pulls apart easily with a fork.
Step 8
8. Remove the roast and let it rest for 10–15 minutes.
Step 9
9. Serve the beef with the sweet potatoes, carrots, and green beans. Spoon some of the cooking juices over the top.
