Ingredients

½ cupsun-dried tomatoes packed in oil
finely chopped drained, plus 2 Tbsp oil from jar, divided
4 x 6 ozskinless salmon fillets
kosher salt
freshly ground black pepper
4garlic cloves
minced
1 Tbspfresh thyme leaves
1 tspcrushed red pepper flakes
¾ cuplow-sodium vegetable broth
½ cupheavy cream
¼ cupfinely grated parmesan
fresh basil leaves
torn, for serving
Instructions
Step 1
Arrange rack in upper third of oven; heat broiler. In a large ovenproof skillet over medium-high heat, heat 1 Tbsp. tomato oil. Generously season salmon on both sides with salt and black pepper and cook, undisturbed, until golden brown, about 3 minutes. Flip and cook until flesh is just starting to brown, 1 to 2 minutes more. Transfer salmon to a plate.
Step 2
In same skillet over medium heat, heat remaining 1 Tbsp. tomato oil. Stir in garlic, thyme, red pepper flakes, and chopped tomatoes. Cook, stirring, until fragrant, about 1 minute. Stir in broth, cream, and Parmesan; season with salt. Bring to a simmer and cook, stirring occasionally, until sauce is slightly thickened, 2 to 3 minutes. Return salmon and any accumulated juices to skillet.
Step 3
Transfer skillet to oven. Broil salmon, watching closely, until flesh easily flakes with a fork, 4 to 6 minutes.
Step 4
Arrange salmon on a platter. Spoon sauce over. Top with basil.
