Instructions

Coat the Beef:

Toss the beef chunks in the seasoned flour until fully coated, shaking off any excess.

Brown the Meat: Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Sear the beef in batches until browned on all sides. Transfer the browned beef directly into your slow cooker insert.

Sauté the Vegetables: Lower the heat to medium and add the remaining oil to the same pan. Cook the sliced onions and garlic for 5 minutes until soft. Add the mushrooms and cook for another 3–4 minutes until they begin to brown.
Step 5
Build the Gravy: Stir the tomato paste into the pan and cook for 1 minute. Pour in the Worcestershire sauce and beef stock. Bring to a simmer while scraping up all the delicious browned bits from the bottom of the pan.
Step 6
Slow Cook: Pour the onion, mushroom, and stock mixture over the beef in the slow cooker. Stir gently to combine. Cover and cook on Low for 7 to 8 hours (recommended) or on High for 4 to 5 hours until the beef is melt-in-your-mouth tender.
Step 7
Serve: Stir the gravy before serving. It pairs beautifully over creamy mashed potatoes or thick slices of crusty bread.
