Delicious thin crêpes you can have sweet or savory. Ideas are cheese and meat or sardines in or put something sweet like jam or chocolate custard.

Ingredients

room-temperature
2 cupsmilk
lukewarm
2 Tbspbutter
melted, slightly cooled
1 cupall-purpose flour
for thinner crepes or 1 1/2 cups for slightly thicker crepes
salt
Shredded cheese
fontina, cheddar, mozzarella
Ham
or cooked chicken breast
eggs
Beat, for about 1 minute
milk
lukewarm, then whisk again
butter
melted
salt
flour
Gradually, whisking well after each addition until the batter is smooth and pourable

Lightly grease a and heat it over medium heat, Pour in enough batter to thinly cover the bottom, then gently swirl the pan
shredded cheese
fold the crepe, and cook briefly until the cheese melts
ham
Fontina
my favorite cheese for these, but mozzarella or cheddar work well too

For a smaller batch, simply cut the recipe in half

1 cupgluten-free all-purpose flour blend
Gluten-free 1:1, Start with gradually add a little more if you prefer thicker crepes
