BEEF CHILI WITH GREEN PEPPERS

Ingredients

2 lbslean ground beef
2 tablespoonsgarlic-infused olive oil
2 cupscarrots
diced
1 ½ cupsgreen bell peppers
diced
2 cupslow-sodium beef broth
2 tablespoonsgarlic-free chili powder
onion-free
2 teaspoonssmoked paprika
1 ½ teaspoonsground cumin
1 teaspoondried oregano
1 teaspoonblack pepper
½ teaspoonsalt
or to taste
1 tablespoononion-and garlic-free Worcestershire sauce
1 tablespoonbrown sugar
or monk fruit sweetener
Instructions
Step 1
1. Heat the garlic-infused olive oil in a large pot over medium heat.
Step 2
2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
Step 3
3. Add the diced carrots and green bell peppers. Cook for about 5 minutes, stirring occasionally.
Step 4
4. Add the beef broth, chili powder, smoked paprika, cumin, oregano, black pepper, salt, Worcestershire sauce, and brown sugar or monk fruit.
Step 5
5. Stir well and bring to a gentle simmer.
Step 6
6. Cover and simmer for 30–35 minutes, stirring occasionally, until the carrots and peppers are tender.
Step 7
7. Remove the lid and simmer for another 5–10 minutes to reduce the liquid and thicken the chili naturally.
Step 8
8. Taste and adjust the seasoning as needed.
