Instructions

Roast the Sweet Potatoes

Step 1
Preheat oven to 425°F convection roast (or 450°F conventional).
Step 2
Toss cubed sweet potatoes with olive oil, paprika, cumin, garlic powder, and black pepper.
Step 3
Spread on a large sheet pan in a single layer, leaving space between pieces. Roast for 25–30 minutes, flipping halfway, until caramelized and tender.

Prepare the turkey kofta

Step 4
Combine ground turkey, grated onion, garlic, parsley, cumin, paprika, coriander, cinnamon, pepper, and salt.
Step 5
Mix gently until combined. Don't overwork the meat.
Step 6
Shape into 8 elongated oval patties, approximately 3–4 inches long.
Step 7
Heat olive oil in a large skillet over medium-high heat. Cook kofta for approximately 4–5 minutes per side, adjusting for thickness, until browned and cooked to 165°F internally.

Make the whipped feta

Step 8
Add feta, Greek yogurt, lemon juice, and garlic to a blender or food processor.
Step 9
Blend until smooth. Add cold water a tablespoon at a time until creamy and spoonable.
Step 10
Taste before adding any salt—the feta provides plenty.

Make the chickpea salad

Step 11
Combine chickpeas, cucumber, cherry tomatoes, red onion, lemon juice, parsley, and black pepper.
Step 12
Toss gently and refrigerate until serving.

Assemble

Step 13
Serve two turkey kofta patties per person alongside roasted sweet potatoes and chickpea salad.
Step 14
Add a generous spoonful of whipped feta sauce, or spread the sauce across the plate and arrange the kofta over it.
Step 15
Finish with fresh lemon and parsley.
