Instructions

Step 1
Wash and finely dice the red bell pepper, onion, poblano pepper, jalapeño, and serrano pepper.
Step 2
Mince the garlic cloves and set everything aside.
Step 3
For a milder chili, remove the seeds and membranes from the jalapeño and serrano peppers.
Step 4
Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
Step 5
Add the diced onion, red bell pepper, poblano, jalapeño, and serrano.
Step 6
Cook for approximately 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Step 7
Add the minced garlic and cook for approximately 30–60 seconds, stirring to prevent burning.
Step 8
Add the tomato paste and stir thoroughly into the vegetables.
Step 9
Cook for another 1–2 minutes to develop a deeper, richer tomato flavor.
Step 10
Add all 3 packets of McCormick Tex-Mex Chili Seasoning Mix.
Step 11
Stir until the vegetables are evenly coated and the spices become fragrant.
Step 12
In a separate large skillet, cook the 24 oz of Impossible Lite Ground Meat and 12 oz of Soy Chorizo over medium-high heat.
Step 13
Break the meat into small crumbles as it cooks.
Step 14
Cook until browned and heated thoroughly, following the package instructions.
Step 15
Pour in 1 can (14.9 fl oz) of Guinness.
Step 16
Transfer the cooked plant-based meat mixture into the Dutch oven with the seasoned vegetables.
