Instructions

Step 1
Bloom the whole aromatics: Heat the cooking oil in a medium skillet or deep pan over medium heat. Drop in the fennel seeds and whole dried red chilies. Let them sizzle for 30 seconds until fragrant. (Optional: remove whole chilies before blending if you want no chili flakes.)
Step 2
Build the allium & paste base: Add the finely diced onion to the pan. Sauté for 7 to 8 minutes, stirring frequently, until completely soft and deeply golden brown. Stir in the minced garlic and ginger paste; cook exactly 1 minute more until fragrant.
Step 3
Toast the ground spices: Turn heat down to low. Add coriander, cumin, turmeric, smoked paprika, ground chili powder, and salt. Stir constantly for 30 to 45 seconds to toast the spices in the oil.
Step 4
Simmer the petite diced tomatoes: Pour in the petite diced tomatoes (with their juices) and stir thoroughly, scraping up toasted spices. Raise heat back to medium and simmer 4 to 5 minutes until tomatoes break down slightly and mixture thickens.
Step 5
The immersion blend (the secret to velvety sauce): Turn off heat and move pan to a cool surface. Tilt pan to pool the mixture; submerge immersion blender head fully and blend on medium-high until completely smooth and velvety.
Step 6
Sear the chicken: Return pan to medium heat. Stir cubed chicken breasts into the smooth gravy. Toss and cook 2 minutes to coat chicken in the flavor base.
Step 7
Braise the hearty vegetables: Add carrots and cauliflower. Pour in 1/4 cup water to thin to a simmering consistency. Bring to a gentle boil, cover tightly, reduce heat to medium-low, and simmer 8 to 10 minutes until fork-tender.
Step 8
The sweet-tangy finish: Uncover. Stir in green peas and date tamarind jelly. Simmer gently uncovered 2 minutes until jelly melts and emulsifies into the gravy. Taste and add a final pinch of salt if desired.
