Spicy Lentil Sloppy Joes, with Green Chili Chutney

3 ½ cupsle puy lentils
1shallot

Instructions
Step 1
COOK LENTILS
Step 2
Place 1 bayleaf, one crushed clove of garlic, and one halved shallot to a 6qt pot. Add 2 tablespoons of kosher salt, and lentils. Place 4 quarts of cold water, (16 cups) into the pot and bring up to boil over medium high heat.
Step 3
Cook lentils for 20-30 minutes, or until just soft, not al dente. Drain lentils in colander, remove shallot, garlic and bayleaf.

Check seasoning, and add into masala paste.

SPICE BLEND

Grind Spices- Using a spice grinder, grind the cardamom, cloves, cinnamon stick, peppercorns, cumin seeds red pepper flakes, coriander and turmeric.
Step 7
Toast Spices- In a large sauté pan, heat the ghee over medium high heat. When the ghee melts and starts to shimmer, add the ground spices. Sauté for a few seconds until the spices become fragrant and added to the lentil mixture.

MAKE MASALA PASTE

In the jar of a blender add chopped chilies, cilantro, ginger, garlic cloves, oil, water and salt. Blend until smooth, adding more water if needed to achieve a smooth paste.
Step 10
Cook masala paste: Add the masala paste to the sauté pan. With a wooden spoon, stir constantly to make sure the paste does not stick to the bottom of the pan. If it does, use a little cold water and scrape the bottom of the pan to deglaze. Stir constantly until you see the fat start to separate from the paste and accumulate on the sides, about 5 minutes.

GREEN CHILI CHUTNEY

Puree Chutney- Cut the chilies in half and remove the seeds. Place them into the bowl of a food processor and add all of the ingredients (serrano chiles, cilantro, 2 garlic cloves, ground pepper, yogurt, lime juice, oil and salt). Process the chutney until smooth.
Step 13
Serve- Lightly toast rolls. Place a spoonful of sloppy joe onto the bottom bun. Generously top each sloppy joe with the chutney and some fried onions. Place the top bun on each and serve immediately.
