Instructions

Step 1
Cook the crispy garlic potatoes Wash the baby potatoes and cut them into approximately 1–1.5 cm cubes, leaving the skins on. Heat one teaspoon of olive oil in a large frying pan over medium-high heat. Add the potatoes in a single layer. Cook undisturbed for 3–4 minutes until a golden crust begins to develop. Add 3 tablespoons of water, cover and cook for another 7–9 minutes until tender. Remove the lid, add garlic powder and rosemary, and cook for another 2–3 minutes until the remaining moisture evaporates and the potatoes become crisp. Transfer to a plate and keep warm.

Step 2
Sauté the vegetables Add another teaspoon of olive oil to the same pan. Add the broccoli, green beans and red pepper. Sauté for approximately 6–8 minutes, stirring occasionally. Add a splash of water and cover briefly if the broccoli and green beans need extra time to soften. Cook until the vegetables are tender but retain a little crunch. Season with salt, black pepper and fresh lemon juice. Transfer to a plate and keep warm.

Step 3
Prepare the steak bites Pat the sirloin dry using paper towels. Cut into evenly sized cubes and season with salt and black pepper. Allow the pan to become hot before adding the steak. Avoid overcrowding; cook in batches if necessary. This helps the beef develop a caramelised exterior instead of steaming.

Step 4
Sear the steak Heat the remaining teaspoon of olive oil over medium-high to high heat. Add the steak bites in a single layer and sear for approximately 1–2 minutes per side, turning to brown the exposed surfaces. Cooking time depends on the size of the cubes and your preferred doneness. A food-safety recommendation for beef steak is 63°C internally, followed by a 3-minute rest. Transfer to a warm plate while preparing the garlic-herb butter.

Step 5
Make the garlic-herb sauce Reduce the heat to low and add the dairy-free butter to the same pan. Once melted, add the minced garlic, rosemary and thyme. Stir gently for approximately 30–60 seconds, until fragrant. Avoid letting the garlic brown too much. Return the steak and any resting juices to the pan and gently toss to coat in the aromatic sauce. If the sauce is too thick or the pan is dry, add a tablespoon of water.

Step 6
Bring everything together Return the cooked potatoes and vegetables to the pan. Gently toss everything together over low heat until warmed through. Sprinkle with fresh parsley and, if desired, a squeeze of fresh lemon. Serve immediately while the steak remains juicy and the potatoes are still crisp.
