Instructions

Step 1
Wash the red bell peppers, remove the stems and seeds, and cut them into large pieces. Using the large holes of a box grater, grate the peppers into a bowl. Transfer the grated peppers to a strainer and allow the excess liquid to drain while preparing the remaining ingredients.
Step 2
Finely chop the green onions and set aside. Open the kidney beans and corn, rinse them thoroughly, and allow them to drain. Thaw and prepare the frozen peas according to the package instructions, then cool and drain them thoroughly.
Step 3
In a large mixing bowl, combine the drained kidney beans, sweet corn, green peas, grated red bell peppers, and chopped green onions. Gently mix everything together to distribute the vegetables evenly.
Step 4
Add 140 g of Kite Hill plant-based protein yogurt, 80 g of vegan mayonnaise, and 25–30 g of mustard. Season with salt, black pepper, and ground paprika to taste. Mix thoroughly until all the vegetables and beans are evenly coated in the creamy dressing.
Step 5
Finely chop the fresh parsley and add it to the salad along with 6 servings of shredded vegan cheddar cheese. Gently fold everything together until well combined.
Step 6
Cover the bowl and refrigerate until the salad is thoroughly chilled. For the best flavor, allow it to rest in the refrigerator overnight so the dressing, vegetables, and seasonings can fully come together.
Step 7
Serve cold, either on its own or alongside your favorite meal. Give the salad one final stir before serving and garnish with additional fresh parsley if desired.
Step 8
Kind Muscle Tip: This salad tastes best the following day! Allowing it to rest overnight gives the dressing time to absorb the flavors of the vegetables, beans, and seasonings, creating an even richer, more delicious salad.
