Instructions

Step 1
Preheat your oven to 350°F. Arrange the Gardein plant-based chicken strips on a baking sheet and bake until heated through and lightly golden, following the package instructions for cooking time.
Step 2
While the chicken cooks, slice all four bell peppers and the red onion into thin strips.
Step 3
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and red onion, sautéing until softened and lightly caramelized.
Step 4
Add the fajita seasoning and cooked plant-based chicken strips to the skillet. Mix everything thoroughly until the chicken and vegetables are evenly coated with the seasoning. Remove from the heat.
Step 5
Prepare a round cheesecake (springform) pan by lining the bottom with parchment paper. Place one large soft tortilla flat on the bottom of the pan, making sure it covers the base.
Step 6
Sprinkle a generous layer of vegan shredded cheese over the tortilla, followed by an even layer of the prepared chicken fajita mixture and freshly chopped cilantro.
Step 7
Place another soft tortilla directly over the filling and repeat the process, layering vegan cheese, fajita chicken and vegetables, and fresh cilantro. Continue until you have four complete layers of filling, finishing with a soft tortilla on top.
Step 8
Place the assembled fajita cake into the preheated oven at 350°F and bake for 20–25 minutes, until the layers are heated through and the vegan cheese has melted.
Step 9
Remove the fajita cake from the oven and allow it to rest for approximately 5 minutes so the layers can settle. Carefully release the springform pan, place a serving plate over the cake, and flip it upside down.
Step 10
Spread a generous layer of vegan sour cream over the top of the cake, then drizzle with lemon cream dressing and chili garlic dressing.
Step 11
Finish with a light dusting of red paprika powder and a generous sprinkle of freshly chopped cilantro.
Step 12
Slice the fajita cake into eight equal portions and serve warm.
