(Gluten free & Vegan) Stuffed peppers with tomato sauce and a twist

I would like to apologise to all traditional recipes, but I discovered that adding a little Tikka Masala seasoning elevated this meal for me, and it was already one of my favourites! I'm also not entirely sure how people in India would feel about adding this seasoning to Beyond Meat, which is meant to be a beef substitute, but I simply enjoyed the flavour combination so much that I decided to save this as a separate version of the recipe. 🙈
(The original inspiration was Punjene paprike from Coolinarika.com, but I've changed quite a few things to make it to my taste and cruelty-free. 🫑🌶️)

Step 1

Tawn the beyond meat. I do 5 minutes on 80W in the microwave, then I flip the block and 5 or more minutes on the other side.
Step 2
Cut the tops off the peppers and hollow them out. Don't discard the tops, set them aside. Wash and clean the peppers, dry them afterwards.
Step 3
Chop the onion and the garlic. I sometimes use a food processor when I'm in pain or in the rush and find that it mixes really well with other ingredients, so the smaller the pieces the better!
Step 4

Prepare 2 vEgg yolks by Cultured food or your favourite vegan egg yolk substitute. For vEggs you're going to need to mix 10 ml (2 teaspoons) of vEGGs powder and 50 ml of water. Whisk vigorously and let them stand for a bit.
Step 5
Mix the beyond meat and add the onion, garlic, lovage, wild garlic, Hungarian sweet paprika, Tikka Masala seasoning, pepper, salt, vEgg yolks and rice and stuff the prepared peppers with it. Add the tops back on that we kept from earlier.
Step 6
Briefly fry the peppers in hot oil on all sides. Add the tomato pure, vegetable bujon, salt, pepper, sugar (I like it quite sweet), more sweet paprika to taste, water as needed (around 600 ml), cover it with a lid and cook over low heat for about 40 minutes. I usually check on it midway through at 20 minutes.
Step 7
Serve with rice or Czech gluten free rohlíky or sourdough dumplings. I again apologise to all the traditional recipes, haha
