Instructions
Step 1
Oven roast, microwave or pan fry bacon. Once done set aside. Save grease for potatoes.
Step 2
Cut potatoes into 1/4 inch cubes. Soak cubes in cold water for 30 min (optional). Toss potatoes in leftover bacon grease or oil. Add paprika, garlic powder, salt and pepper to taste. Cook in oven at 400 degrees for 20-25 min until tender. Broil on high for 5 min to add crispiness.
Step 3
Dice then saute onions and peppers.
Step 4
Over vegetables add eggs and stir until mostly done. Leaving a little moisture.
Step 5
Let everything come to room temp or refrigerate.
Step 6
In a large bowl combine egg vegetable mixture and potatoes. Chop and add bacon slices. Stir in one 7 oz bag of shredded cheese of choice.
Step 7
Use a kitchen scale and one tortilla, determine how many grams of filling is right for tortilla size. My tortillas are roughly 7 in or small burrito size and 120 grams of filling was ideal.
Step 8
In batches of 4-6 tortillas, microwave wrapped in paper towel for 20 seconds. Fill and wrap each tortilla with the same amount of filling determined in the previous step.
Step 9
Line burritos up on a cookie sheet lined with parchment and freeze. Transfer to Ziploc in around two hours.
To Reheat
Step 10
Wrap paper towel (preferably damp) around the frozen burrito and microwave for 1:30.
