Ingredients

1 Tbspolive oil

2 Tbspharissa paste

4chicken thighs
bone-in, skin-on

2 x 400gtins cannellini beans
drained and rinsed

700gcherry tomatoes

60gchorizo
finely chopped

25gfresh coriander

25gfresh mint
leaves picked

25gfresh parsley

1 Tbspcapers
drained and rinsed

1garlic clove
small

1 tspwholegrain mustard

1juice lemon

75mlolive oil
Instructions
Step 1
Preheat oven to 200°C (180°C fan) mark 6. In a large bowl mix the olive oil and harissa with some seasoning. Add chicken thighs and rub harissa mixture all over.


Step 2
Put the cannellini beans, tomatoes and chorizo in a large roasting tin or ovenproof dish, season and stir to mix. Arrange chicken thighs on top, skin side up.

Step 3
Cook in oven for 30-35min until chicken is cooked through. Meanwhile, whizz salsa verde ingredients with some seasoning in a food processor until finely chopped.

Step 4
Drizzle salsa verde over chicken and serve with a green salad, if you like.
