1 poundfresh prawns
peeled and deveined
1 ½ cupkumquats
sliced
4 cupsvegetable broth

Instructions
Step 1
1. Heat the olive oil in a large pot over medium heat. Add the diced onion, celery, carrot, and sauté until the onions become translucent, about 5 minutes.

Add the minced garlic, grated ginger, and diced potatoes and continue to cook for 1 minute before adding paprika, Cayenne pepper, and thyme. Cook for 1 minute more, stirring constantly.

2. Add the vegetable or seafood broth to the pot, bring it to a simmer, and then add softened cream cheese. Let it cook for about 10 minutes to allow the flavors to meld together.

3. Add the sliced kumquats to the pot and continue to simmer for an additional 5 minutes. The kumquats will release their flavors into the soup.

4. Meanwhile, season the prawns with salt and pepper. Depending on your preference, you can leave them whole or chop them into bite-sized pieces.

5. Gently add the seasoned prawns to the simmering soup. Cook for 3-5 minutes or until the prawns turn pink and opaque. Be careful not to overcook them, as they can become tough.

6. Taste the soup, adjust the seasoning if needed, and add either the heavy cream or lemon juice, depending on your preference.

7. Remove the soup from the heat. Ladle it into bowls, making sure to distribute the prawns and kumquats evenly.
