Sundried Tomato Fettuccine Carbonara

Instructions

Step 1
In a large frypan combine 1 tsp olive oil, garlic, bacon and onion and cook for 3 minutes then set aside.
Step 2
Add chicken strips to frypan and brown on both sides then reduce heat.
Step 3
Whilst chicken is cooking, in a food processor add coconut yoghurt (or coconut cream), egg, sundried tomatoes, salt and paprika. Blend until smooth.
Step 4
Add bacon mix, broccoli, cherry tomatoes and coconut sauce into fry pan and mix through chicken.
Step 5
Leave on low heat to simmer for 15 minutes, ensuring chicken is cooked through.
Step 6
Whilst sauce is simmering, add Zero slim pasta to a bowl and add boiling water. Cover until softened (approx. 1 minute) then drain and pat dry with paper towel.
Step 7
Add snow peas and spinach and cook a further 3 minutes on low heat.
Step 8
Stir pasta through Carbonara.
