Instructions
Step 1
Boil the noodles, then drain and set aside.
Step 2
Slice the carrots, yellow squash and zucchini into very thin half circle slices. Dice the onion and garlic.
Step 3
Heat some olive oil in a pan and then cook the onions, carrots and garlic in it. Set aside
Step 4
In the pot that was used to boil noodles, cook the zucchini and squash. When they're soft and beginning to look done add the broth and half & half.
Step 5
Let simmer on low heat for about 3 minutes. Add the parmesan cheese and mix evenly. Finally add the pasta and remaining cooked veggies
