Ingredients
4 servings
2 tablespoonstoasted sesame oil
2 tablespoonslow sodium soy sauce
1 tablespoonrice vinegar
1 teaspoonlight brown sugar
1 teaspoonChinese hot mustard
1 teaspoonginger
fresh grated
½ teaspoonkosher salt
1garlic clove
large, finely grated
2purple carrots
large, or orange, peeled and shaved into ribbons
2 cupsfresh snow peas
2 cupsfresh asparagus
pieces, cut into two inches
8 ozsoba noodles
uncooked
¼ cupfresh basil
thinly sliced
Instructions
Step 1
1. Whisk together first eight ingredients into a large bowl. Add carrot ribbons to mixture, toss to coat and set aside
Step 2
2. Bring a large pot of water to a boil. Add snow peas and asparagus, cook until crisp tender, about 2 minutes
Step 3
3. Remove vegetables with a slotted spoon to a colander, rinse with cold water until cool. Add snow peas and asparagus to carrot mixture
Step 4
4. Add noodles to boiling water, cook to al dente, 5 to 6 minutes. Drain and rinse with cold water
Step 5
5. Add to bowl, toss well and sprinkle with basil
