Instructions
Step 1
Whisk the eggs, pesto, salt, and pepper together in a bowl.
Step 2
Place diced tomato and spinach in frying pan until wilted. Then remove from pan and place to side.
Step 3
Pour egg mixture into pan and cook until halfway done, then add the tomato and spinach in the centre.
Step 4
Fold the omelete in the pan and then serve with a side of fruit.
