Quick Kimchi ( Mak-kimchi 막김치)

This is quick, east to make, and no fermentation needed type kimchi. It is also referred as a small batch kimchi. I hope you like this recipe and try!

Instructions

Step 1
Cut the cabbage lengthwise into quarters and remove the cores. Chop it up into bite size pieces.
Step 2
Sprinkle a couple of handful of salt and toss or turn cut napa cabbage pieces by hand to ensure salt is evenly distributed.
Step 3
Put a plate with a heavy object to push down gently. Set it aside for 30 minutes to 1 hour( depending on your room temperature or how much salt you add, the time would vary.)
Step 4
Make porridge( optional) and set aside to cool: In a pot, boil 3/4 cup of water. mix 1/4 cup of rice flour and water( like you are making starch water). When a water boil, pour the mixture into the boiling water( keep stirring). You can mix 1/4 cup rice flour into 1 cup of cold water and then start cook it. It would take longer. and you gotta be careful. It will shoot out like lava.
Step 5
Using a food processor( or grater), mince and puree onion, ginger, and onion
Step 6
Making Kimchi Paste- In another bowl, add cooled rice porridge, coconut aminos( or fish sauce), hot pepper flakes, minced/pureed ginger, garlic, and onion, and some cracked black pepper. Mix well and set it aside to get hot pepper flakes to be hydrated fully.
Step 7
Rinse the cabbage in cold water 2 times to clean it thoroughly and drain the cabbage
Step 8
Add cut green onion pieces, Kimchi paste, and roasted sesame seeds to the bowl of cabbage pieces. Mix well.
Step 9
Put the kimchi into an air-tight sealed plastic container or glass jar. Fill up only 80 % so it would not overflow later.
